I had a bit of a mishap with Carote when the first pan I ordered turned out to be not compatible with induction tops. Something down to combined listings and misdirected responses etcetera. But I really liked the look and feel of the product, so I located the correct pan and ordered again, hoping to not go from the frying pan into the fire. I didn't. Turns out, the surface finish is scary good. It seems resistant to a bachelor's vigorous overtures both while cooking and cleaning it. I try to ensure it cools down sufficiently before pouring water on it and giving it a plain rinse with just the hands and water before the soap stage. I've managed to evade any mishaps and the pan maintains its non-stick performance quite well. The pan gets used almost daily (5 days/week) for eggs over easy and grilled shrooms, and I get the perfect cooked yolk with no bleeding, and beautifully browned mushrooms at extremely low heat levels and less than a teaspoon of extra virgin olive oil. I wouldn't hesitate to call it the best pan I've ever used so far, the only question is durability. If I have any complaint it is that the coating does not transfer heat all that well and loses it faster than I'm used to. But that's a minor niggle, I just need one more level of heat than the Amazon pan I was using before this.
